Mystic Mesa is owned and led by Chef Randy Tapia, a Santa Fe native whose roots run deep in the flavors, culture, and traditions of New Mexico. Born and raised in Santa Fe, Chef Randy has spent 25 years honing his craft, bringing together the soul of his hometown with innovative culinary technique. Throughout his career, he has held leadership roles in some of Santa Fe’s most iconic kitchens, including serving as Executive Chef at El Nido and La Casa Sena, as we as Chef de Cuisine at the historic La Fonda on the Plaza. His experience blends fine dining expertise with a deep respect for local ingredients and regional heritage. Chef Randy is also the owner of the beloved Poki Tako food truck, where his creativity and bold flavors have earned a loyal following. At Mystic Mesa, his passion for fresh ingredients, vibrant New Mexican flavors, and cooking for his community is the heart of every dish. Chef Randy’s mission is simple: to craft food that brings people together and celebrates the magic of the Mesa we call home.
